Perlage. The organic Prosecco pioneersproseccando
We want to continue our journey through the Prosecco by talking about an excellent organic wines producer: Perlage.
Since 1985, the owners are focussing their know-how onto the organic production and biodynamic agriculture for an ethical choice before any fashion or market request. From that moment on, the company has developed a wide range of wines, most of them related to bubbles and sparkling wines.
You can start from the Prosecco DOC world, for a customer that is more price sensitive but also caring about ethical choices so that he chooses vegan wines.
The real passion of this winery expresses its potential in the labels of the DOCG region, Conegliano-Valdobbiadene and Asolo. In their product scope you can find some wines that are a real innovation.
An excellent example is the Animae. The winery owner introduced us to this wine with those words: “Both a process and a product innovation”. This wine is born following the idea to create a “wine that is only wine”, no solfites and an organic wine as starting point.
Compared to the normal Prosecco that stays only 1 month into the autoclave (as the Consortium disciplinary is asking), this wine remains 4 months. If not explained before the tasting, the product created is difficult to be recognized as a Conegliano-valdobbiadene because it is more similar to a Franciacorta.
This is the so called “Long Charmat method”, it is surprisingly similar to the Franciacorta once in the glass.
This innovation has been related to the need to preserve the wine at first.
After the lysis, the residuals of the yeasts emanate some mannoproteins which are giving the creaminess and the persistence to the wine but they are also natural preservatives. So the winery decided to use this method to preserve the wine before the tasting. In this way they obtained a wine which tastes of yeast and crust of bread. A bottle that definitely needs a pairing with the right food.
The Perlage organic wines are sold into the supermarkets chains dedicated to organic life (like the Italian Ekor and NaturaSì): nice reference points for those who are living far from the winery. In any case we strongly suggest a tour to Perlage in order to get to know the owners who will for sure be happy to tell you every detail… it is also a nice occasion to stock those excellent bottles that are respectful of environment.
